Mars Bar Cheesecake

Mars Bar Cheesecake is a super popular cheesecake in restaurants, parties and among almost everyone for a good reason!  It’s decadent, flavourful and sooooo ridiculously delicious. Give this mars bar cheesecake a go….you won’t regret it.

Ingredients

  • 50 grams Chocolate Melts chopped
  • 2 tbsp Brown Sugar
  • 50 grams Butter
  • 2 cups Cream Cheese room temperature
  • 1/2 cup Caster Sugar
  • 1 cup Cream thickened
  • 3 Mars Bars chopped
  • 250 grams Chocolate Biscuits
  • 1/2 cup Butter melted
  • 60 ml Water boiling
  • 3 Gelatine 3 teaspoons


Method

To Make the Base:

  1. Crush biscuits finely add melted butter and mix well.
  2. Press over a base and sides of a round 20cm springform cake tin.
  3. Chill for 30 minutes or until firm.

To Make the Cheesecake:

  1. Combine two tablespoons of cream, brown sugar and extra butter in a small saucepan.
  2. Stir on low heat for 3-4 mins until sugar dissolves. Set aside.
  3. Dissolve gelatine by whisking into water with a fork until dissolved.
  4. Stir till smooth. Set aside.
  5. Combine two tablespoons of cream and chocolate in another saucepan and stir on low heat until chocolate dissolves. Set aside.
  6. Using electric mixer, beat cheese and sugar together until smooth and in another bowl whip remaining cream until soft peaks are formed.
  7. Stir gelatine into cheese mixture with Mars bars and then fold in cream.
  8. Pour half the cheese mixture into the chilled base and then drizzle with chocolate and caramel sauces.
  9. Pull a skewer backwards and forwards through the sauces.
  10. Pour remaining cheese mixture in and then drizzle the top with sauces again and repeat the skewer.
  11. Cover and chill for 3 hours.

Notes

Recipe Hints and Tips:

  • Mars Bar Cheesecake is not suitable to freeze.
  • Make up to two days ahead and keep covered in plastic wrap in the fridge.
